       Beer has fine and dense foam. But where does the foam come from?

During the fermentation process of beer, ingredients such as malt, hops and yeast will produce a special kind of protein. When the protein precipitates from the beer, it will form foam. The carbon dioxide produced during fermentation will create a lot of bubbles, which is also the key to the formation of foam. The proteins and polypeptides from raw materials like malt gather together, and the foam formed in this way is long-lasting and stable, and not easy to break.


       What factors are related to the amount of foam?


       The temperature directly affects the amount of foam. If beer is stored at a high temperature for a long time, even the best beer will taste insipid. If the temperature is too low, the amount of beer foam will decrease, resulting in a stronger bitter taste and the aroma being easy to dissipate. Therefore, the best storage temperature for beer is 10℃. At this temperature, the foam is not only rich, fine and long-lasting, the aroma will gather and not disperse, and the taste is comfortable.


       If it is contaminated by microorganisms during the fermentation process, it will lead to the inability to form the "foam protein". After opening the bottle, the carbon dioxide will rush out rapidly. The beer foam will rise quickly and disappear quickly as well. When too much carbon dioxide is injected during the canning of beer, it will also affect the amount of foam. Although foam can enhance the taste to a certain extent, it is not the case that the more foam, the better.
